He would like, however, to take this opportunity of expressing his special indebtedness to the work and writings of Professor Atwater and his colleagues in America, who have done so much in recent years to advance our knowledge on the principles of dietetics. The opening chapters, especially, of the present book owe much to the teaching of the American school.
